2 medium Zucchini - grated1 medium Carrots, grated1 medium brown onion, diced6 eggs1 cup Flour, white 1.5 tsp Baking Powder 0.5 tsp Salt 1 cup, shredded Cheddar Cheese 0.25 cup Canola Oil Black pepper, to taste6 large Egg, fresh, whole, raw
Preheat oven to 350F.
Mix flour, baking powder, and salt in small bowl.
Beat six eggs in large bowl.
Add flour mixture and beat until smooth.
Add grated zucchini, carrot, onion, cheese, and black pepper.
Mix thoroughly and add to 8" x 10" baking pan for six thick servings, or. 9x13" pan for thinner slices.
Back 30 minutes, or until done. Should be moist from zucchini.
