4 cup Chicken Broth 2 Cloves of Garlic 2 Bay leaves dried 8 oz boneless, skinless chicken breast .5 cup Wild Rice 1 cup chopped celery1 cup raw, chopped Carrot 1 chopped Yellow Onion1 cup nonfat milk2 tbsp Olivio spread.25 cup white flour1tsp Italian Seasoning
Cook the chick in the chicken broth with the garlic, bay leaves,wild rice, celery, carrots, onion, and Italian seasonings. Simmer on low for about an hour. Removed the chicken breast, and shred it. Return the meat to the soup.
In a medium saucepan, melt the Olivio on low. Once it is melted, whisk in the flour to create a roux. Slowly add the nonfat milk, while whisking rapidly to avoid lumps. Pour the white sauce into the soup, and stir to combine. Season with salt and pepper to taste. Garnish with parsley.
If you like a bit of bite, you might add some cayenne.
