454.0 Grams Cauliflower, raw2.0 tbsp Butter, salted8.0 tbsp Shredded Coconut Unsweetened (Bob's Red Mill)4.0 serving Darigold Medium White Cheddar Cheese1.0 cup Swanson Natural Goodness Chicken Broth
Shred or rice the cauliflower. Sautee butter until browned. Add cauliflower, coconut and stock and bring to a boil, then reduce heat to low and cook until softened. Let cool a little then blend until smooth. Stir in cheese and serve.
