Coconut pie

Ingredients
7 oz Coconut, sweetened 0.5 cup Buttermilk, lowfat 2 large Egg, fresh, whole, raw 1 tsp Vanilla Extract 4 tsp Lemon Juice 'Real Lemon' 100% juice 0.5 cup Butter, salted 2 crust, single 9" Pie crust, frozen, ready-to-bake
Directions
Preheat oven to 350. Mix milk, eggs, vanilla, butter, and lemon juice, then add coconut. Pour into 2 pie crusts. Cook for 15 minutes then add pie crust shield to prevent the crust from browning too fast. Continue cooking for 20 minutes or until the center is no longer jiggly Serving Size: Each pie can serve 10
