Orange roasted beet arugula salad

Ingredients
3.0 beets (2" dia, sphere) Beets, boiled1.0 large (3-1/16" dia) Oranges1.0 tbsp Extra Virgin Olive Oil1.0 tbsp Balsamic Vinegar1.0 fl oz Orange Juice1.0 tsp Grey Poupon Dijon Mustard1.0 dash Salt1.0 dash Pepper, black2.0 cup Arugula
Directions
Segment orange and set aside. Roast beets wrapped in foil for 50 minutes at 450 degrees. Peel them when they cool and slice. Wisk the rest of the ingredients and toss arugula orange segments and sliced beets together.
