Sugar Free Cheesecake Parfait

1 Cup + 2 Tbsp Xylitol2 Packages Cream Cheese1 tsp vanilla2 Eggs6 Squares Baking chocolate, unsweetened1 and 1/2 Cups Heavy Whipping Cream1 Cup Halved strawberries, fresh
Cream together cream cheese, 1/2 cup xylitol, vanilla and eggs, and bake in water bath for 45 minutes at 350. Set aside in fridge overnight then cut into 1 inch squares.
Make chocolate sauce using 6 squares unsweetened chocolate, 1/2 cup cream, 1/2 cup xylitol and melt over medium high heat.
Make whipped cream from 1 cup whipping cream and enough xylitol to sweeten.
Layer a dish with whipped cream, cheesecake chunks, chocolate sauce and strawberries, alternating bewteen layers.
Refridgerate until served.
