Whipped Mascarpone Frosting

Ingredients
3.5 cup, whipped Heavy Whipping Cream4.0 tbsp, unsifted Powdered Sugar16.0 tbsp Bel Gioioso Mascarpone Cheese3.3 oz White chocolate pudding mix - jello brand
Directions
Soften mascarpone for 30 min to get to room temp. Wisk in mixer till smooth. Ad d about 1/2 cup of cream to mascarpone till combined. Add remaining and mix until soft peaks form. Add powdered sugar 1 tbls at a time. Whip slowly. When almost stiff peaks form, sprinkle top with pudding mix. Wisk slowly to combine then on medium till smooth and fluffy frosting forms. Refrigerate for 30 min before frosting cupcakes. Serving Size: Frosts 40-50 cupcakes
