Rhurbarb Custard Pie

Ingredients
2.5 cups diced rhubarb3 tsp flour sprinkled over rhubardBeat 3 eggs and a pinchof saltAdd 1/2 cup sugar1 tbsp of real lemon juice.Pour over rhubarb in an unbaked pie shell
Directions
Bake in 325 oven about 40 minutes or until set and slightly brown. I like to turn the oven off after 40 minutes and leave it in for about 10 minutes.

Cool and enjoy!

    my husband loves rhubarb pie, but in 22 years I have never made him one, I always rely on relatives for that, but this recipe looked so easy I tried it and he loved it, had two helpings and made sure I saved him the rest for the next day. - 7/2/08
