Easy Slow Cooker Curried Lentils

Ingredients
2 teaspoon curry powder1 teaspoon ground cumin1 teaspoon ground ginger1/4 teaspoon turmeric1/2 teaspoon cayenne1 medium onion -- chopped1 jalepeno pepper - chopped3 cloves garlic -- crushed, minced1 cup lentils -- rinsed1 package (10-oz size) chopped spinach, partially thawed and broken up2 cups low sodium, organic vegetable broth 1 can diced organic, low-sodium tomatoesSalt to tasteChopped tomato and mint for garnish -- if desired
Directions
Combine ingredients in the crockpot. Cover and cook on LOW for about 6 hours, or until rice and lentils are tender but not mushy.

Serve garnished with chopped tomato and mint if desired. Can be served over rice, or alone. Makes 4 servings.
