Hot German Fauxtato Salad

Ingredients
4 cup (1" pieces) Cauliflower, cooked .5 cup, chopped Onions, raw 9 tsp Sucralose (like Splenda) 3 tbsp Cider Vinegar .25 tsp Pepper, black .25 cup, chopped Green Peppers (bell peppers) .25 cup Coconut Oil 3 serving Bacon, Hormel Black Label Fully Cooked 1 dash Salt
Directions
Cover Cauliflower with water and cook until fork tender but not completely done. I usually do mine in the microwave for about 10 minutes. Drain. Meanwhile, in a cast iron skillet, over medium heat, melt the coconut oil, add in the chopped onions and bell pepper, stir until they are beginning to get golden. Chop up the pre cooked bacon (I like to stack them and slice across the stack), add to the pan of onions and peppers, stir. I know it looks like a lot of oil, but that is what makes the "sauce". Make sure the cauliflower is dry, then add to the pan, stir to incorporate. Add in the sucralose and cider vinegar, salt and pepper, continue to stir so it doesn't burn. Taste to see if you want more seasonings, and adjust to your liking. Serve immediately!
