Sauce Vierge - Tomato/Herb/EVOO mother sauce 1/20th jar

Ingredients
4 large whole (3" dia) Red Ripe Tomatoes 1 cup Olive Oil 1 cup Cilantro - fresh 12 tsp Lemon Juice 1 tbsp Salt 2 cloves garlic (optional)
Directions
Cut up tomatoes so they're still small-chunky and let drain a bit in a colander. Chiffonade (roll & slice) herbs. Combine all in large Mason jar, shake and let sit at least 1 hour to develop flavors. Can be frozen.
