Ground Turkey & Black Bean Enchiladas

Ingredients
1.5 cup La Victoria Enchilada Sauce 16 oz Turkey, Ground turkey, 93% lean 1 medium (2-1/2" dia) Onions, raw 2 cup shredded Cheddar Cheese 1 cup Rosarita Black Bean Refried Beans 10 serving Mission Artisan-style Corn and Whole Wheat Blend Tortillas
Directions
Dice onion finely and saute with low fat cooking spray. Add ground turkey and cook until done. Drain any fat. Preheat oven to 350. In baking pan, roll one tablespoon refried black beans, ground turkey, and about 1 t. cheese into a tortilla. Place is pan sprayed with nonstick cooking spray and arrange these in a row. Cover with enchilada sauce and remaining cheese. Bake at 350 for 30 minutes or until cheese is melted and edges are bubbly. Allow to set ten minutes before serving.
