Creamy Cauliflower Soup

4 cup Cauliflower, raw 2 cup (8 fl oz) Chicken Broth .5 cup, chopped Onions, raw .5 cup, diced Celery, raw 1 clove Garlic .25 cup Half and Half Cream .5 tsp Nutmeg, ground 2 tbsp Parmesan Cheese, grated 1 tbsp Extra Virgin Olive Oil
Saute chopped onions, celery and garlic in olive oil. Add salt and pepper to taste. Rough chop small head of caulifliwer, approximately 4 cups. Add to pot and cover with 2 cups of chicken broth. Cook on medium heat until soft. Stir in parmesan cheese, cook another 5 minutes.
Using hand blender, blend until smooth, then add nutmeg & half and half. Serve hot. DO NOT boil after adding half and half.
