2 cup green or brown lentils, dry 6 cups vegetable broth 3 large carrots 3 cup Spinach, fresh 1 14.5 oz can diced tomatoes1 large onion 2 cups water 2 bay leaves.25 tsp Pepper, black
Dice onions, carrots and celery and mince garlic. Add all ingredients to crock pot and set on high for 4 hours or low for up to 10 hours.
Salt to taste, after testing. Some veggie broths are already very high in sodium.
