Airfriyer Eggplant chips

Ingredients
3 serving Baby Eggplant - 1 eggplant (by CTMOM2KIDS) 1 tbsp Olive Oil 4 tbsp Argo Cornstarch 4 fl oz Water, tap .25 tsp Onion powder .25 tsp Oregano, ground .25 dash Salt .25 tsp Pepper, black 1 serving 1 tsp Parsley Flakes (by BUDDY_LOVE)
Directions
Preheat air fryer to 390 degrees

Slice eggplants thinly
Mix cornstarch, olive oil, water and seasonings

Place slices in air fryer in batches, about 6 min. per side

Remove and continue with the rest.

Add all back to the air fryer for 3 to 4 min. to heat and recrisp

Serving Size: makes 3 or 4 servings-something less than one baby eggplant each
