Wild mushroom soup, non-dairy

Ingredients
3 Tbs Butter, unsalted 6 Tbs chopped Shallots 4 cup sliced mixed Mushrooms, [shitake, oyster, bella] 3 tsp Thyme, fresh1 tsp Rosemary 3 cup Rice Dream Original rice milk 3 cup Chicken Broth 3 Tbs Flour, white 2 tsp Salt 1/4 tsp Pepper, black 1/2 cup White Wine1/4 cup Parsley
Directions
In large pot, saute shallots in butter. Add mushrooms, thyme and rosemary. Cook 8 minutes. Mix flour with 1 cup broth, add to pot, bring to boil to thicken. Boil 2 minutes, reduce heat. Add all broth and rice milk, salt and pepper. Simmer 15 minutes. Add wine and parsley, let simmer 10 minutes until flavors blend.

Serving Size: 1-cup per serving, makes 10 cups
