5 tbsp chopped Shallots 2 tbsp Extra Virgin Olive Oil 1 cup Fresh Zuchinni and/or Squash (by AMOSS7) 12 serving Cherry Tomatoes, Fresh, 1 Tomato 1 cup, pieces or slices Mushrooms, fresh 2 clove Garlic 1 pepper Jalapeno Peppers 2 serving Ham - Hillshire Farm Deli Select Ultra Thin Honey Ham (2 ounce serving) 2 dash Salt 6 large Egg, fresh, whole, raw 4 fl oz Milk, canned, evaporated, nonfat 1 cup Spinach, fresh 1.5 cup Kraft 2% Shredded Cheddar Cheese
Heat the olive oil in a cast iron skillet over medium high heat. Add shallots, zucchini, and jalapeno. Cook till soft, add tomatoes (cut in half), garlic, mushrooms and ham. Keep cooking till mushrooms are soft. Add spinach and cook till soft. Add salt to taste.
In a bowl, mix with a whisk the eggs, evaporated milk and cheese. Poor the egg mixture into the skillet and let cook on stove till it is set on the sides.
Then put skillet in a 400 degree oven for 8-10 minutes, till brown and set.
