Ingredients
1.0 cup, chopped Onions, raw2.0 medium Carrots, raw1.0 cup, sliced Zucchini2.0 tbsp Canola Oil3.0 clove Garlic1.0 pepper Jalapeno Peppers400.0 Grams Canned Tomatoes700.0 Grams Ground beef20.0 Grams Chicken stock, home-prepared1.5 cup, pieces or slices Mushrooms, fresh400.0 Grams Beans, red kidney400.0 Grams Beans, red kidney
Directions
1. Slice onions and in a large pot brown them in the oil. 2. In the blender, pulse the carrots, zucchini, chili pepper, and garlic, then add them to the browned onions to caramelise. 3. In a separate flat-bottomed pan, brown the ground beef. 4. After the vegetable base has caramelised, add the canned tomatoes, mushrooms, chicken-stock, and kidney beans and stir 5. Add the browned ground beef to the main pot and stir. 6. Add spices to taste eg. cumin, paprika, cayenne pepper, onion powder, garlic powder, ground chili, oregano. 7. Add salt to taste 8. Bring to boil then simmer and cook over low heat for at least 30 mins
