Fathead sandwich bread

Ingredients
2 cup Cheese, Kroger Part Skim Mozzarella Cheese Shredded 3 serving Bob's Red Mill Almond Flour - per 1/4 Cup 3 medium Egg, fresh, whole, raw 2 tbsp Cream Cheese 1 tbsp basic Italian spice mix
Directions
Mix shredded mozzarella and cream cheese and microwave for 90 seconds, mix well with the Italian spice mix. Separately, mix the almond flour and eggs until well incorporated. You may have to microwave the cheese for another 30 seconds to mix the flour mixture and the cheese until fairly well incorporated. Honestly, it doesn't have to be perfect. You will have to wet your hands to handle the dough as it is very sticky. Line a cookie sheet or pizza pan with parchment paper. Spread the dough as thin or thick as you like (I like mine thin). Bake in a preheated oven at 415 degrees Fahrenheit for about 15 to 18 minutes. Keep an eye on it and punch holes on it with a fork when it starts to puff up. I like to let mine brown nicely before pulling it out of the oven. Cut into 8 portions. It will last at least a month in the refrigerator in a closed container (wait until it's cold to put away to avoid condensation)

Serving Size: Makes 8 pieces. Cut square or round and slice like pizza slices.
