Lemon Drops

Ingredients
1 cup sugar1/2 cup water1/2 tsp cream of tartar1/2 tbsp lemon extract1 tbsp citric acidyellow gel food coloringsuper-fine sugar, to coat
Directions
Bring sugar, water and cream of tartar to a boil over medium/medium-high heat.
Cook until a candy thermometer registers 300F.
Immediately remove pan from heat, stir in the extract, citric acid and food colouring (mixture will foam).
Spoon drops of the candy onto a silicone mat lined pan.
Cool completely
