Catfish Miso

Ingredients
6 oz. Mori-Nu Lite Firm Tofu, Cubed2 Tbsp. Organic Eden Gen Mai Miso1 Sheet Nagai's Roasted Nori4 Cups of Water + 2 Tbsp of water for Miso1 Tbsp. Diced Onion3 oz. Fresh Catfish FilletPreferred Spices
Directions
Lightly fry seasoned catfish in pan with PAM cooking spray (3 minutes per side). While catfish is frying, dice onion, cube tofu, Cut sheet of nori into squares with cooking shears, and mix Miso in a cup with 2 Tbsp. of warm water. In a medium sized pot, combine water, onion, miso paste, tofu cubes, and nori squares. Cook over low heat while catfish finishes cooking. Remove catfish from heat. Flake meat with a fork and slowly add to soup. Cook soup over low heat for another 10 minutes. Add spices according to individual taste.
