French Country Potatoes

Ingredients
Country Crock, Shedd's Spread Country Crock Plus Calcium & Vitamins (Soft), 2 tspOnions, raw, .25 cup, choppedMushrooms, canned, .25 cup Potato, 10 oz Rosemary, dried, 1/8 tsp Pepper, black, 1/8 tsp Instant Chicken broth mix Low sodium 1 packet, 1 serving (remove)Gruyere Cheese, 3/4 oz
Directions
Preheat oven to 415. Spray 1 quart casserole with non stick cooking spray.

In medium nonstick skillet, melt margorine over medium heat; add onion and muchrooms; cook over medium heat until onion is translucent, about 2 minutes. Stir in Potatoes, rosemary, and pepper; transfer to prepared casserole.

In 1 cup measure stirr together chicken broth mix and 1/3 cup water; pour ocer potatoes; top evenly with cheese.

Bake uncovered, until potatoes ar4e fork- tender, about 30 to 35 minutes.

Makes 2 servings

Can substitute swiss for grueyre
