Italian Tuna and Veggie Melt

Ingredients
3 oz albacore tuna in water2 green onions, chopped1/2 shallot, chopped fine2 tbsp chopped mushrooms1 tbsp fat free mayonnaise1 tbsp fat free Italian dressing1/4 tsp italian seasoning1/4 tsp black pepper2 slices low calorie wheat bread2-3 slices tomato2 tbsp shredded parmesan cheese or1/4 cup shredded fat free mozzarella cheeseblack pepper to taste
Directions
Preheat oven to 400 degrees
In a small bowl, combine the first 8 ingredients.
Heap the tuna mixture onto the bread slices, and top with tomatoes and cheese of choice.
Sprinkle with black pepper to taste
Place the sandwiches on a cookie sheet, and bake for 10-15 minutes, or til toasted.
Alternatively, you can toast the bread beforehand, then place the sandwiches under the broiler
Yield: 2 open faced sandwiches
