Beef Vegetable Soup

Ingredients
16 oz beef cubes2 large potatoes, cubed (500 grams)1 large onion, cubed (220 grams)3 large carrots, sliced (200 grams)2 large stalks celery, sliced (150 grams)200 grams fresh tomatoes, chopped2 tsp beef base2 tbsp olive oil1 tsp thyme1/4 tsp black pepper10 cups water
Directions
Cut beef cubes into smaller cubes about 1/2" square. Brown beef cubes in olive oil in deep pot. When browned, remove from pan and set aside. Add 3 cups of water and deglaze pot. Add beef back in when pot is deglazed and cook beef until tender about 15 minutes. Add the remaining ingredients and remainder of the water. Cook about 30-40 minutes.

Makes about 12, 2 cup servings.
