Chicken or Shrimp Lo Mein - Low Fat

Ingredients

1 package brown rice lo mien noodles (you can find these in the international/pasta aisle of Whole Foods) 1 package of frozen broccoli 1 carrot diced 1 small red pepper sliced long ways 1/2 Cup snow peas 1 Tablespoon sesame oil 1/2 pound boneless/skinless chicken (can do shrimp as well) 1/2 Cup coconut aminos 1/4 Cup water 2 Tablespoons rice wine vinegar 1/4 Cup agave syrup 3 cloves of garlic 1/2 ginger root grated
Whisk all sauce ingredients together in a bowl and set aside
cut raw chicken breast into small chunks (or you can boil while you prep everything)
Heat sesame oil on medium heat
Add all veggies and sauté until soft
Cook noodles according to package instructions
Add protein and cook until no longer pink
Add sauce and bring to boil then reduce to simmer
Add cooked noodles to skillet and toss together with sauce
Serving Size: Makes 6 servings
