Liza's Vegetable Soup

Ingredients
1 medium (2-1/2" dia) Onion, diced1 tbsp Extra Virgin Olive Oil 2 tsp Tastefully Simple - Garlic Garlic (minced garlic works too)8 carrot (7-1/2") Carrots, sliced or diced6 serving Celery Stalk (1 med stick 7-8 in), sliced or diced3 cup, sliced or diced Zucchini2 stalk Broccoli, diced .5 head cabbage, cut into 1" squares3.5 cup Del Monte Diced Tomatoes, No Salt Added (2 cans)6 cup (8 fl oz) Chicken Broth or Bouillon (I used Wildtree bouillon and water)1.75 cup Tomato Sauce (1 can)
Directions
Drizzle olive oil into stock pot. Add onions and garlic and sautee until onion is transparent. Add carrots, celery, zucchini, broccoli, tomato sauce, and diced tomatoes. Sautee for 3 minutes. Add cabbage and broth. Season with pepper and Italian seasoning if desired. Bring to boil. Reduce heat and simmer for 20-30 minutes until all vegetables are tender. Enjoy!
