Low Carb Eggplant Crust Pizza

1 eggplant, peeled (yield from 1 Eggplant, fresh 01.25 cup Mids Pizza Sauce 5 serving Armour Turkey Pepperoni 16 slices 1 cup, pieces or slices Mushrooms, fresh 10 tbsp Green Peppers (bell peppers) 15 jumbo Black Olives 10 oz Mozzarella Cheese, part skim milk
Slice eggplant lengthwise and place on parchment paper in 5 squares to make 5 equal "pizzas." Add sauce, pepperoni and other ingredients, top with cheese. These can be frozen. When ready to bake, remove from freezer and move from parchment paper to a greased cookie sheet and bake at 400 for about 20 minutes or until cheese is bubbly.
