Lazy Chicken Tikka Masala

1T safflower oil2T minced garlic1 pkg boneless, skinless chicken thighs (6 thighs) 1 bag spinach leaves (about 6 cups pre-cooking)2 bell peppers1 jar Journey to India Tikka Masala Simmer Sauce (Aldi brand)
Chop chicken into bite-sized pieces.
Slice bell peppers, then cut slices in half to make approximately bite-sized.
On medium high heat, sautee the garlic in safflower oil in skillet.
Add chicken pieces to oil and garlic.
Cook chicken, stirring frequently.
Add spinach leaves and pepper pieces.
Cook, stirring frequently, until spinach has wilted and pepper pieces have softened.
Add jar of sauce.
Turn heat to low and simmer for 10-12 minutes.
Serve.
