Italian tortellini pasta salad

Ingredients
package of fresh cheese tortellini15oz can diced tomatoes, drainedlarge can black olives, slicedsmall jar artichoke hearts, choppedfresh basil, chiffonadesalt and pepper1 tbsp red pepper flakes 2 cups fresh spinach2 heads worth of garlic cloves1/2 cup olive oil1/4 cup balsamic vinegar4 oz fresh mozzerella, diced
Directions
Cook the pasta according to package directions. Drain.

trim ends off garlic cloves, put in some tin foil and drizzle with a bit of olive oil and mix with cloves until they are all coated. Roast in a 400 degree oven until very soft and slightly browned.

Mix all ingredients together in a large bowl and enjoy!
