Eggplant Moussaka

Ingredients
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant, fresh 2 cup Zuccini Squash 1 small (1-3/4" to 2-1/2" dia.) Potato, raw 8 oz Ground beef, lean 2 medium whole (2-3/5" dia) Red Ripe Tomatoes 1 medium (2-1/2" dia) Onions, raw 0.25 cup 100% Liquid EggWhites 1 large Egg, fresh, whole, raw 2 tbsp Olive Oil 2 cup Cauliflower, raw 0.5 can (6 oz) Tomato Paste
Directions
Sautee ground beef and onion , add tomato paste and season well. Cut eggplant in slices, salt and squeeze well. Cut zuccini , tomato and potato in slices. Layer eggplant, meat, tomatoes, zuccini, potato and eggplant. Sprinkle with oil and bake on 400 F 30 minutes. Place cauliflower pieces on the edges . One egg, two egg whites and a sip of milk mix well and pour over moussaka . Bake another 15 min. Cut and serve with jogurt. Serving Size: Makes 9 pieces
