Zero Points Vegetable Soup

Ingredients
2 med. garlic cloves, minced1 med. onion, diced2 med. carrots, diced1 med. sweet red pepper, diced1 med. stalk celery, diced2 small zucchini, diced2 c. green cabbage, shredded2 c. swiss chard, chopped2 c. cauliflower, chopped2 c. broccoli, chopped2 tsp. fresh thyme, chopped6 c. vegetable broth2 tb. fresh parsley, chopped1/2 tsp. salt1/4 tsp pepper2 tb. lemon juice
Directions
Put garlic, vegetables, thyme and broth in a large soup pot. Cover and bring to a boil over high heat. Reduce heat and simmer partly covered for 10 minutes. Stir in parsley , salt and pepper and lemon juice. Makes 12 1-cup servings.
