Keto-Friendly Seafood Salad Dressing

Ingredients
7 tbsp chopped Shallots .5 cup, diced Celery, raw 0.25 tsp Kosher Salt (by 65PLUS1) .5 tsp Paprika .5 tsp Dill weed, dried .25 tsp Pepper, black 1/2 cup Homemade MayonnaiseFOR THE MAYONNAISE (yield: 2 1/4 cups)1 large egg1T lemon juice, fresh1C extra virgin olive oil1/8t black pepper1/2t salt
Directions
FOR THE MAYONNAISE:
Blend egg and lemon juice in a blender/food processor until the oil turns into the white pudding you think of when you think of mayonnaise. Stop mixing, add salt & pepper, combine.

FOR THE DRESSING:
In a large bowl add all the ingredients together gently.
Coat seafood of choice in the dressing.
Refrigerate for an hour before serving.
