Pickled beet, onion, and cucumber salad

Ingredients
454 grams (1 15 oz jar) sliced pickled beets 1 cup, sliced Onions, raw 1 cucumber (8-1/4") Cucumber (with peel), very thinly sliced1 cup Sour Cream
Directions
Combine sliced beets and pickling liquid, sliced onions, sliced cucumbers, and sour cream in a large non-reactive bowl. May be served immediately, but flavor improves refrigerated from 30 minutes to overnight.

Light sour cream may be substituted for a lower-fat version of this dish.
