Strawberry Keto mug cake

4 medium (1-1/4" dia) Strawberries, fresh 0.5 serving Publix Greenwise Applesauce (by EMBRYOCONCEPTS) 14 gram(s) Butter (Kerrygold) Pure Irish Gold Foil 1T=14g 1 serving Egg, Kirkland Organic Brown (Large) (by GIBONEYJ) 3 tbsp Viva Labs Organic Coconut Flour (by TESTING1239) 1 tsp Vanilla Extract 2 tbsp Organic Valley Heavy Whipping Cream
1. Puree the strawberries, Apple sauce, softened butter and 10 drops of the stevia in a blender or Nutribullet (just pulse it, we do not want it very smooth)
2. Beat an egg and vanilla extract in a microwave safe mug.
3. Mix the pureed ingredients to the egg mixture. Also add the coconut flour at this stage.
4. Microwave on high for 3 minutes ( 2.5 to 3.5 minutes depending on the microwave)
5. Cool for 5 minutes and Enjoy!
6. Optional: I pulse the heavy whipping cream with 5 drops of stevia and use this to top the mug cake
