Minestrone Soup

Ingredients
12 tsp Margarine, soft .75 cup, chopped Onions, raw .5 cup, diced Celery, raw .5 cup, chopped Carrots, raw 2.375 cup cannellinni Beans, Canned (by MAMIEDODLE) .5 cup, chopped Cabbage, fresh 1.812 cup Stewed Tomatoes 0.062 cup Tomato Paste 2 medium (2-1/4" to 3-1/4" dia.) Baked Potato, with skin 4 cup (8 fl oz) Chicken Broth 2 clove Garlic 2 tbsp Parsley, dried 1 tsp Salt 2 serving Great Value Elbow Macaroni Noodles (1/2 c dry) .5 cup Parmesan Cheese, grated
Directions
Melt butter or margarine in a heavy pot over medium heat. Add onion, celery, and carrots; saute for a few minutes.

Add beans, cabbage, tomatoes, tomato paste, potato, stock, garlic, parsley, and salt to the pot. Bring to a boil, cover, and reduce heat. Simmer for approximately 1 hour until vegetables are barely tender.

Add pasta, and simmer for 30 minutes more. Correct seasoning, and serve hot with grated cheese.
