Sweet Potato Tomato Sauce

Ingredients
2 Medium-sized sweet potatoes, cut into small pieces 1 1/2 Canned tomatoes (low sodium)1/2 cup Coconut Milk, unsweetened4 Tbsp Extra Virgin Olive Oil 8 cloves Garlic Season with salt and pepper to taste(Other seasonings - thyme, rosemary, red pepper flakes, cayenne)
Directions
1. Boil sweet potato pieces for 20 minutes, until you can easily put a fork through.
2. Add to blender with remaining ingredients - caution to vent when blending due to steaming potatoes.
3. Keeps for 1 week in fridge, and can be frozen up to 1 month.
