Green Beans and Tomatoes

Ingredients
200 grams green beans2 medium tomatoes, diced2 tbsp. olive oil3 cloves garlic, minced3/4 tbsp. balsamic vinegarItalian seasoning to taste
Directions
Throw the green beans in boiling water for two minutes, then dump the boiling water and run cold water over them twice.
Cook minced garlic in olive oil for 1-2 minutes. Add green beans for 1-2 minutes to warm. Add tomatoes and coat beans and tomatoes with oil mixture. Remove from heat and add Italian seasoning and balsamic vinegar.
Serve.

    These were a bit twangy. Otherwise delicious. Reduce the vinegar to 2 Tbls. I used 1/2 tsp. of Italian seasoning and steamed beans 8 minutes. These would be good w/ mushrooms. - 9/30/10
