170 grams Mozzarella Cheese (1.5cup)30 grams Cream Cheese (2 T)1 egg Duck Egg (or chicken egg)0.25 cup Coconut flour (sometimes needs a little extra, up to 1/3 cup)Herbs to your liking
Melt cheese and cream cheese in microwave at 30s intervals. Add coconut flour and egg. Knead to combine fully. Add herbs if you like (Italian, chili, oregano, etc).
Knead thin, 1/4” thick max. Poke holes (see pic) with fork and bake at 220°c for 12-15 min. I like to flip the pizza upside down after about 8min for maximum crisp
