Pork veggie fried rice

12 oz center cut pork loin, sliced in bite sized pieces1.5 tbsp Extra Virgin Olive Oil 0.5 tbsp Sesame Oil 1/2 medium Onions, chopped1 cup Snow Peas, fresh 1 small Zucchini, chopped3 cloves Garlic, minced 1 Tbsp Ginger Root, minced2 tbsp Gluten Free Soy Sauce 3oz. Cole Slaw - 3 Color Deli Cole Slaw Fresh herbs (finely chopped) to taste (I used basil, rosemary and thyme)1 cup Great Value Instant Brown Rice uncooked1 cube Chicken bouillon
Cook rice according to package instructions adding bouillon cube to water.
In large skillet or wok over medium high heat, heat 1 Tbsp olive oil. Add pork and cook until no longer pink, stirring frequently. 3-5 minutes.
Remove pork from pan. Add remaining olive oil and sesame oil and then add onions, snow peas, zucchini and Cole slaw mix. Stir for 2-3 minutes then add garlic, ginger and fresh herbs. Stir fry until veggies begin to soften, 3-4 minutes.
Add in pork and rice and toss to mix well. Remove from heat and add soy sauce. Mix well and serve.
