Introduction

A very fiber-full recipe! A very fiber-full recipe!

Ingredients

    1 lb extra lean ground beef
    1 pkg of taco seasoning
    1 pkg of fat-free ranch dressing mix
    2 cans of kidney beans (undrained)
    2 cans of pinto beans (undrained)
    2 cans of black beans( undrained)
    1 can of tomatoes with chilies
    1 can of corn (optional) (undrained)


Directions

Brown meat and drain.

After meat is drained, put all ingredients in a stock pot and bring to a boil.

Once brought to a boil, the soup is done. Let set about 10 minutes and it is ready to serve.

(I leave the ranch out and put fat free dressing on top to give an extra kick. It is very good and freezes well.)

    This recipe tasted very good. I was very full after eating a bowl of this (which was like 1 1/2 cups). It made me wonder about the calories quoted, especially with the large amount of beans, and only 1 can tomatoes. So, I added up all the calories, and I got 272 per cup, not 127. - 11/4/10

    This is one of our favorites. Very easy, tasty, and it feeds a BUNCH of people! I add a diced medium onion while I'm browning the meat, and substitute yellow hominy for the corn. We usually serve with jalapeno cornbread. Just the thing for cool evenings when you don't have a lot of time to cook! - 4/13/09

    This soup was excellent. My 9 year-old son loves it and asks for seconds. I mixed each serving with 1/4 cup of brown rice and added 2 Tbsp. of salsa to mine. Fantastic! It's a great recipe for using up beans in your pantry. - 9/29/09

    We make this too but we use ground turkey and we also use 40 percent low sodium taco seasoning instead of the ranch due to the sodium content. It's very good. - 4/13/09
