Yummy Pasta Salad

Ingredients
1 13 oz box rotini pasta3/4 cup zesty italian salad dressing1 cup sliced red peppers (about 1 med)1 cup sliced green peppers (about 1 med)1/2 cup thinly sliced red onion1 1/2 cups crumbled feta cheese1 6 oz can black olives sliced1 english cucumber sliced (leave skin on)1 cup cubed jicama1 cup cherry tomatoes cut in half
Directions
Cook pasta to al dente. Drain and place in large bowl pour in half of the dressing and stir gently. Let cool, then place in the fridge for a few hours to chill. Cut up veggies, and olives. When pasta has chilled stir in veggies, olives and crumble in the cheese. Pour in the remaining pasta and chill for at least four hours or overnight is even better! The longer this salad chill's the tastier it gets. Enjoy!!

For a healthier recipe try the whole wheat pasta, omit the cheese and olives and add as many veggies as you like.
