Ingredients
Bulgur, dry, 1.5 cup (remove)Lemon juice, 0.75 cup (remove)Cucumber (peeled), 250 grams (remove)Parsley, 90 grams (remove)Red Ripe Tomatoes, 361 grams (remove)Scallions, raw, 4 medium (4-1/8" long) (remove)Mint, fresh, 30 grams
Directions
Makes 18 half cup servings.

Soak bulgur in lemon juice at least an hour. If the bulgur's still really crunchy, add a half cup or so boiling water and let sit 15 more minutes. Chop everything else and mix in. Salt and pepper to taste.
