Creamy Tuscan Garlic Tortellini Soup

3 tbsp butter2 medium onions, chopped6 cloves garlic, minced8 cups chicken broth 2 28 ounce cans petite diced tomatoes 2 cans white beans2 cups fat free half and half 1/4 cup Parmesan cheese 2 tbsp Italian seasoning2 tsp salt 3/4 tsp pepper4 cups shredded chicken 24 ounces refrigerated Tortellini 4 cups fresh Spinach, chopped
In a large pot over medium heat, melt butter. Add onion and garlic and cook until tender. Add chicken broth, diced tomatoes, white beans, half and half, Parmesan, Italian seasoning, salt and pepper. Bring to a simmer.
Add the chicken, tortellini, and spinach. Let simmer for 10 minutes for the tortellini to cook.
