Sweet and sour pumpkin chicken

Ingredients
250 g pumpkin, cubed2 chicken breasts, boned and skinned, cubed1 md onion, chopped2 md tomatoes, chopped2 cloves garlic, minced1 c water1 tbsp sugar2 tbsp vinegar2 tbsp cooking oil2 tsp salt1 tsp curry powder1 tsp ground coriander1 tsp cayenne pepper
Directions
Prepare all vegetables before hand. Heat oil in a wok or deep pan. Saute onions and garlic. Add chicken pieces and brown. Add a bit of water, tomatoes and all the seasonings, including the sugar and vinegar. Stir a couple minutes. Then add the pumpkin and cook for 5 minutes. Add the eggplant and the remaining water. Simmer on medium heat about 15 minutes or until vegetables are tender. Serve over basmati rice or with chapatti.
