12 large Egg, fresh, whole, raw, separated36 tsp Granulated Sugar, beaten slowly into egg yolks till light 12 oz Alcoholic Beverage (gin, rum, vodka) 86 proof 12 fl oz Rum Beat alcohol slowly into yolk mix, beating constantly. Beat 4 cup, fluid (yields 8 cups whipped) Heavy Whipping Cream and Fold this into the yolk/alcohol/sugar mix.
This isn’t cooked. Care in preparation and refrigeration must be taken to avoid bacterial contamination. Don’t leave out in a heated room, but keep refrigerated at all times.
