3.0 large Egg, fresh, whole, raw0.5 cup Bread crumbs, dry, grated, seasoned0.25 cup Flour - Gold medal all purpose flour3.0 serving Cheese, Dairy-Free, Daiya, Mozzerella Style, shredded or chopped0.25 cup Butter, salted0.25 tsp Morton Iodized Salt1.0 dash Pepper, black4.0 cup spinach plus baby kale1.0 cup Soy Milk
Preheat oven to 350°. Grease a casserole dish or any round pan. In a large bowl, microwave the spinach and kale with the butter for 2 minutes. Remove the bowl from the microwave and push the greens and butter mixture to the side of the bowl. On the other side of the bowl, beat the eggs. Mix the beaten eggs into the greens and mix in all the other ingredients. Pour the mixture into the prepared pan and bake for 45-55 minutes. You can eat this hot or cold.
