Basic Instant Pot Mashed Potatoes

2 lbs peeled, cubed potatoes3 cup water.5 tsp Salt .33 cup Milk, nonfat (skim milk) 1 tsp Lemon Juice 'Real Lemon' 100% juice .25 cup Great Value Light Sour Cream1 tsp Salt pepper to taste2 tbsp light butter or margarine
Put potatoes into Instant Pot and cover with water. Season with salt and close lid, shutting steam valve.
Pressure cook, high for 10 minutes, then quick release steam valve.
Combine skim milk with lemon juice to create buttermilk.
Drain potatoes, reserving 1/4 to 1/2 cup of water.
Add buttermilk mixture, sour cream, butter, salt, pepper and some of the reserved water. Mash with a potato masher, adding more water as needed.
Serving Size: Makes 18, 1/4-cup servings
