Saffron Rice

Ingredients
1 c white rice (basmati or thai preferred)1 Tbsp olive oil1 can Chicken broth1 Tbsp saffron threads
Directions
1. Heat the olive oil in a 2 qt pot
2. Add the rice (do not wash) and cook, stirring constantly until the grains of rice start to change color (translucent)... don't allow the grains to brown
3. Add the chicken broth and saffron. Stir, cover, and reduce heat to low.
4. Cook until the rice is tender (20-30 min). Fluff and serve immediately.
