Rice noodles with ground beef

Ingredients
250g dried rice stick noodles 400g beef mince, 96% lean1 medium (150g) brown onion, sliced thinly2 cloves garlic, finely chopped350g chinese cabbage (pak choi), chopped coarsely 1 medium red pepper300g broccoli250g mushrooms, slices10tbsp soy sauce0.5 cup (120ml) beef stock4 green onions (green shallots), sliced thinly
Directions
Place the noodles in a large heatproof bowl, cover with boiling water; stand for 5 minutes. Drain.

Meanwhile, spray wok with cooking oil, stir-fry mince, garlic and onion for about 5 minutes or until mince is browned and cooked through.

Add cabbage, red pepper, mushrooms and broccoli; stir-fry until just tender.

Add noodles and combined soy sauce, stock and green onions. Stir-fry until combined and hot.
