Stewed Red Yams

Ingredients
1.0 cup, cubes Yams0.5 cup, chopped Onions, raw1.25 cup, grated Carrots, raw6.0 tsp Ginger Root1.0 tbsp Fennel seed2.0 tbsp *Flax Seed0.25 cup, shredded Coconut, raw4.0 tbsp Trader Joe's Dried Fruit Dried Cranberries (4 Tbsp or 1/4 Cup)0.25 cup dried pineapple1.0 tsp Cinnamon, ground0.25 tsp Allspice0.5 tsp Nutmeg, ground0.25 tsp Pepper, red or cayenne
Directions
This is a whole foods plant-based diet dish. Can also be classified as Vegan. Neither of these descriptors are available in the Sparks Recipe Calculator. Dice the yam into small cubes, a quarter of an inch or so in size. Finely grate the carrot and finely chop the onion. Grate the ginger very finely. Finely mince the dried pineapple. Measure all the other ingredients and set aside. Measure a half Cup of water or wine and have mear the stove top. Add two Tbs. of cooking liquid into a non-stick fry-pan over medium heat. Add cubed yam. Cover pan. Allow to sautée, starting frequently. When beginning to soften, add onion and carrot. Add cooking liquid by the Tbs. as needed to prevent sticking. Add dried fruits and spices at this time. If you are preparing this as a side dish, add Maple syrup at this time. Add a quarter Cup. Allow muxture to sautée, stirring frequently and adding water or wine as needed. When yam cubes are completely cooked, plate, garnish and serve.
